Sticky Pineapple Chicken Recipe: A Quick 30-Minute Sweet & Savory Dinner

pineapple-chicken

Sticky Pineapple Chicken is the kind of easy chicken dinner I turn to when I want something seriously delicious without spending the whole evening in the kitchen. Juicy golden chicken, colourful peppers, sweet pineapple chunks and a glossy homemade sauce come together in just 30 minutes for a dinner that tastes far more complicated than it actually is.

There’s something wonderfully satisfying about the sweet-and-savory combination here. The pineapple brings bright tropical sweetness, while dark soy sauce, garlic, ginger and tomato purée give the sauce a rich, savoury backbone. As everything bubbles together, the sauce reduces into that gorgeous sticky coating that clings to every piece of chicken.

This is essentially my shortcut answer to a sweet and sour chicken recipe when I don’t fancy coating and deep-frying chicken. Everything happens in one wok or large frying pan, making it a brilliant option for busy weeknights, family dinners and those evenings when you need a quick dinner recipe that still feels like a proper treat.

Serve it over fluffy boiled rice, add a little coriander and finish with sriracha if you like some heat. Honestly, this is one of those 30 minute meals where everyone suddenly appears in the kitchen asking when dinner is ready!

Why You’ll Love This Sticky Pineapple Chicken

There are plenty of reasons this pineapple chicken deserves a regular spot in your easy weeknight dinners rotation.

First, the whole recipe takes around 30 minutes from start to finish. There’s no complicated marinade, no deep fryer and no mountain of washing-up.

The chicken is lightly coated in cornflour before being stir-fried. This simple step helps create a golden exterior while helping the chicken stay wonderfully juicy inside.

Then come the vegetables. Onion and red bell pepper add sweetness, colour and just enough crunch, while pineapple chunks bring that unmistakable sweet-and-tangy flavour.

But the real star is the sauce.

Pineapple juice, brown sugar, dark soy sauce and tomato purée are mixed together before being poured into the wok. As the sauce bubbles, it reduces and becomes darker, thicker and beautifully caramelised.

The result is a sticky chicken stir fry with layers of flavour in every bite.

And because you can easily add extra vegetables, chilli or even noodles, it’s also a brilliant family dinner idea when you want something flexible.

Sticky Pineapple Chicken Ingredients

You only need a handful of everyday ingredients to make this easy pineapple chicken recipe.

Chicken

Use 3 chicken breasts, approximately 525g or 1.1lb altogether, chopped into bite-sized pieces.

Chicken breast is quick to prepare and works particularly well here because it cooks rapidly in the hot wok. You can also use boneless chicken thighs if you prefer darker meat and an even richer texture.

Cornflour

You’ll need 2 tablespoons of cornflour, also known as cornstarch.

Don’t skip this little step! Tossing the chicken in cornflour before frying gives the pieces a lightly crisp coating and helps lock in moisture.

Pineapple

Use one 435g (15oz) can of chopped pineapple in juice.

The important part is to keep the juice. You’ll use it as the base of the sticky sauce, so there’s absolutely no need to throw it away.

Vegetables

You’ll need:

  • 1 onion, cut into wedges
  • 1 red bell pepper, cut into chunks
  • 2 garlic cloves, minced
  • 1 teaspoon minced ginger

The onion and pepper cook quickly while still retaining some texture, giving the dish that classic stir-fry feel.

Sticky Sauce

The homemade sauce uses:

  • 2 tablespoons soft brown sugar
  • 3 tablespoons dark soy sauce
  • 1 tablespoon tomato purée
  • Reserved pineapple juice

It’s sweet, salty, tangy and savoury all at once.

For an extra spicy chicken stir fry, add 1 teaspoon of chilli flakes, 1–2 chopped fresh chillies or a spoonful of sriracha.

How to Make Sticky Pineapple Chicken

The beauty of this recipe is that everything is cooked in stages, so you don’t need to panic about having every ingredient perfectly prepared before you begin.

Start by placing the chicken pieces into a bowl. Sprinkle over the cornflour, salt and pepper, then toss everything together until the chicken is evenly coated.

Heat 3 tablespoons of oil in a wok or large frying pan over high heat.

Once the oil is properly hot, add the chicken. Stir-fry for around 5–6 minutes, moving the pieces around occasionally, until they’re golden brown on the outside.

While the chicken cooks, make your sauce.

Mix the reserved pineapple juice with the brown sugar, dark soy sauce and tomato purée. Give it a good stir and set it aside.

Next, add the onion and red pepper to the wok. Stir-fry with the chicken for about 2 minutes.

Add the pineapple chunks and cook for another 2 minutes.

Now add the garlic and ginger. Cook for approximately 1 minute, just until fragrant.

Pour the prepared sauce into the wok and stir everything together.

This is where the magic happens.

Keep the heat around medium-high and allow the sauce to bubble and reduce for approximately 5–6 minutes. Stir occasionally as it thickens and coats the chicken.

You’ll know it’s ready when the chicken looks darker and glossy, and the sauce has become thick, sticky and caramelised.

Turn off the heat and serve immediately over fluffy boiled rice.

Finish with fresh coriander and, if you’re a fan of heat, a drizzle of sriracha.

What Does Pineapple Chicken Taste Like?

Think of this as the delicious meeting point between a classic chicken stir fry and sweet and sour chicken.

The pineapple provides natural sweetness and a subtle tang, while brown sugar deepens the caramelised flavour. Dark soy sauce brings saltiness and umami, while garlic and ginger add warmth and aromatic depth.

The sauce isn’t aggressively sour. Instead, it’s rich, glossy and balanced, with just enough sweetness to make the pineapple shine.

The peppers and onions add freshness and texture, while the chicken gives the dish plenty of satisfying protein.

Serve everything over rice and you’ve got a colourful rice bowl recipe that feels comforting without requiring hours of cooking.

Easy Ingredient Swaps and Variations

One of my favourite things about stir-fry recipes is how easy they are to customise.

For a different protein, replace the chicken with chopped pork tenderloin or thin strips of steak.

For a vegetarian version, use Quorn pieces or marinated tofu.

You can also bulk up the vegetables with mange tout, sugarsnap peas, mushrooms, asparagus, tenderstem broccoli, carrots or chopped spring onions.

Want noodles instead of rice?

Add ready-cooked egg noodles at the end and stir-fry for approximately 2 minutes, making sure they’re piping hot throughout. Suddenly you’ve got a pineapple chicken noodle stir fry without needing to prepare a separate side dish.

For more heat, add fresh chilli, chilli flakes or sriracha.

And if you fancy experimenting with the flavour, a little sesame oil, peanut butter or Cajun seasoning can take the dish in a completely different direction. I’d choose one rather than throwing everything into the wok at once!

My Best Tips for Perfect Pineapple Chicken

Get the wok properly hot

A hot wok is essential for getting golden chicken and lightly crisp vegetables rather than letting everything steam.

Give the oil time to heat before adding the chicken.

Don’t skip the cornflour

The cornflour coating isn’t just there for texture. It helps protect the chicken from drying out while creating that lovely golden exterior.

It’s one of the easiest tricks for improving homemade Asian-inspired dinner recipes.

Keep the pineapple juice

This is your secret weapon.

Instead of using water or a complicated collection of sauces, the pineapple juice forms the sweet fruity foundation of the sauce.

Let the sauce reduce

Don’t rush the final stage.

Give the sauce those 5–6 minutes to bubble and reduce. That’s what transforms a thin liquid into the sticky, glossy coating that makes this recipe so irresistible.

Serve immediately

This easy chicken dinner recipe is at its best straight from the wok while the vegetables still have some bite and the sauce is beautifully glossy.

Can You Make Sticky Pineapple Chicken Ahead?

Yes, although I think this recipe tastes best freshly cooked.

If you’re meal prepping or simply want to get dinner sorted ahead of time, cook the dish, allow it to cool and refrigerate it in a sealed container for up to one day.

When you’re ready to eat, heat approximately 1 tablespoon of oil in a wok over medium heat. Add the pineapple chicken and stir frequently until it’s piping hot throughout.

This should take around 10 minutes.

If the sauce has thickened too much in the refrigerator, add a small splash of water to loosen it.

I don’t recommend freezing this particular stir fry because the peppers and onions can become soft and soggy after freezing and reheating.

What to Serve With Sticky Pineapple Chicken

The easiest option is fluffy boiled rice. The rice soaks up that gorgeous sticky sauce and turns every mouthful into something seriously satisfying.

You could also serve it with jasmine rice, egg noodles or steamed vegetables.

For a lighter option, add extra stir-fried vegetables and reduce the amount of rice.

And don’t forget the finishing touches. Fresh coriander adds a lovely herbal freshness, while sriracha is perfect if you like your quick chicken dinner with a fiery kick.

Final Thoughts

Sticky Pineapple Chicken proves that a homemade 30-minute chicken dinner doesn’t have to be boring or complicated.

You’ve got juicy golden chicken, crunchy peppers and onions, sweet pineapple and a glossy homemade sauce that comes together from ingredients you probably already have in the cupboard.

I especially love this recipe for those evenings when takeaway food is tempting but I know I can have something fresher, faster and completely homemade on the table before the delivery driver would even reach the door.

It’s adaptable, colourful and incredibly easy to make your own. Switch the chicken for pork, add extra vegetables, turn it into a noodle stir fry or bring the heat with sriracha.

So grab your wok, open that tin of pineapple and get cooking!
