  • 80g plain flour
  • 60g cornflour
  • 1 teaspoon smoked paprika
  • 1 teaspoon ground cumin
  • 1 teaspoon garlic powder

  • ½ teaspoon chilli powder
  • ¾ teaspoon fine salt
  • ½ teaspoon black pepper
  • 1 large egg
  • 100ml cold sparkling water
  • 2 tablespoons vegetable oil, plus extra for cooking

For the Crunchy Lime Slaw

  • 200g finely shredded red cabbage
  • 100g finely shredded white cabbage
  • ½ small red onion, very thinly sliced
  • 2 tablespoons chopped fresh coriander
  • Juice of 1 lime
  • 1 teaspoon honey
  • Pinch of salt

For the Chipotle-Lime Sauce

  • 100g mayonnaise
  • 60g Greek yoghurt
  • 1 tablespoon lime juice
  • 1 teaspoon chipotle paste
  • ½ teaspoon smoked paprika
  • 1 teaspoon honey

To Assemble

  • 8 small corn or flour tortillas
  • 1 ripe avocado, sliced
  • Fresh coriander
  • 1 lime, cut into wedges
  • Extra chilli sauce, optional

How To Make Crispy Fish Tacos

Start with the slaw because it benefits from a few minutes of sitting time.

Add the red cabbage, white cabbage, red onion and coriander to a bowl. Toss with lime juice, honey and a pinch of salt.

Give everything a good mix and set aside.

The fish should flake easily when gently pressed with a fork.

Transfer the cooked pieces to a plate lined with kitchen paper.

While the fish is cooking, warm your tortillas in a dry frying pan for around 20–30 seconds per side.

Keep them covered with a clean tea towel so they stay soft.
